Diabetes

Hey everyone,
The other day I applied for life insurance through our bank. I called them and it turns out that there is a hold on my account because I had high glucose excretions. Today I went to the doctor and found out that I have diabetes. The good news is, is we caught it VERY early and this is reversible with diet and excersize. They gave me a small pill to take daily and want me to continue to loose weight and eat right. I went to Walmart and bought the Biggest loser cook book... tried it out and it was so good!

1 small chicken breast grilled and sliced
1 tomatoe
1/4 Cup alfalfa sprouts
1 whole wheat tortilla
2 teaspoons dijon mustard (I used ligh mayo b/c I forgot dijon mustard)

that was lunch

for snack: two humas deviled eggs (deviled eggs with choice of hummas) remove and toss yoke.

Dinner: 5 ounces boneless skinless chichen breast grilled
8 medium aspargus

Healthy recepies that are sooo good!

My friend's recopies... that I am going to start making and posting daily!!!!!! They are healthy and tasty!

Barefoot Contessa's Turkey Meatloaf

3 cups chopped yellow onions (2 large onions)
2 tablespoons good olive oil
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon fresh thyme leaves (gotta use fresh!)
1/3 cup Worcestershire sauce
3/4 cup chicken stock
1 1/2 teaspoons tomato paste
5 pounds ground turkey breast
1 1/2 cups plain dry bread crumbs
3 extra-large eggs, beaten
3/4 cup ketchup
Preheat oven to 325 degrees F.

In a medium saute pan, over medium-low heat, cook the onions, olive oil, salt, pepper, and thyme until translucent, but not browned, approximately 15 minutes. Add the Worcestershire sauce, chicken stock, and tomato paste and mix well. Allow to cool to room temperature.

Combine the ground turkey, bread crumbs, eggs, and onion mixture in a large bowl. Mix well and shape into a rectangular loaf on an ungreased sheet pan. Spread the ketchup evenly on top. Bake for 1 1/2 hours until the internal temperature is 160 degrees F. and the meatloaf is cooked through. (A pan of hot water in the oven under the meatloaf will keep the top from cracking.) Serve hot, at room temperature, or cold in a sandwich.
*I use a lot more fresh thyme. Try lemon thyme too, it's delicious!
** Make 2 - 2.5 lb meatloafs, freeze one for cooking later.

okay I suck at this

This past few weeks I have really been slacking. I called the bank because they are doing the life insurance stuff for me and I was wondering why I didn't hear from them yet. Turns out I have a little higher than normal glucose levels in the urine and that is a bad sign of maybe early diabetes. I have heard that you can get this under control by weight loss. I hope that his works because that is something I don't want to deal with the rest of my life since i'm only 24.

On a good note, today was the first time I stepped into the gym at the community center for an hour or so. My goal is to be able to keep up with my husband since he is going to be in the military soon. I hope I can do it.

Week 4 or 5

Sorry I haven't been on here latley... I have been busy with school and I also forgot the pass word to get on here. I have been excersizing a lot lateley and have sort of been watching what I have been eating. The past 2 times we went to Olive Garden I have gotten their Salad and bread sticks and thats it. The salads are very tasty! The medical report person for our life insurance came the other day and I weighed it at 245! That is atleast 15 LBS lost since my first post... only 45 more to go!

Week 1 and week 2

I have thouroughly enjoyed getting out of the house more. We have been on a lot of bike rides. I feel more healthy just by getting out and enjoying the fresh air. I have cut down a lot of the carbs and the non essential sugars and followed the food pyramid pretty closely. I rewarded myself this morning and also maybe a little last night by having some of my old favorite foods. I had the ultimate hash browns from the cafateeria but other than that I have been pretty good. I switched out soda (minus the mountain dew today) for V-8 fushion juice. I had to go to the DR. today for a check up and they put me on a scale and I have lost about 5 lbs from the last time I weighed in. So that would put me at 255 give or take a pound. Eating healthier has already given me a little edge on life to the point that I can't just sit anymore through a movie.

Day 3

Sorry about skipping day to... yesterday Zoey and I went on a 45 minute walk down 1800 south. It was great! Today I can defiantly feel my shin splints acting up though. Today wasn't that great of day since I "have a friend visiting" all you ladies out there should know what i'm talking about, and I get cravings when "she" is here every month. I have gone over on my daily sugar allowence and ate 3 small cinnimon rolls my friend brought me. BAD Idea! When Joe gets home we are all going for a family bike ride for about an hour. Should be fun.

Oh I found this cool tool on the pyramid website that you enter in all the food you have eaten that day and then it will tell you with smiely faces how you did.
